You will decide how your estate (money, possessions, etc) is dealt with when you die. When a person dies intestate (ie without a valid Will) the law dictates how and in what shares their estate is divided up.
Writing a valid Will makes the administration of your estate more straightforward for those left behind.
Your Will can address important matters such as who will act as your Executors, appointing guardians for children, providing for partners, loved ones and even for your pets.
